Piwi Pad Thai


I found an awesome recipe for easy pad Thai in The Happy herbivore. I wasn't too sure how kid friendly it would be as it included chili powder and hot sauce. So I adapted the sauce and it turned out very tasty. A post nap Mini Piwi gave it her approval and Miss K will hopefully eat the leftovers tomorrow -Daddy had made her sushi earlier.

Piwi Pad Thai sauce

4 Tbsp reduced Sodium Kikkoman Soy sauce 
4 Tbsp Peanut butter
1/2 tsp dried Garlic granules
1/2 tsp ground ginger
1 Tbsp lemon juice
1 Tbsp raw sugar
4 T water
Mix together and microwave on high for 2 minute -mixing every 30 seconds.

I had boiled thick rice noodles (according to package directions) and had stir fried half a shredded cabbage and 1/2 cup of grated carrot. The sauce, noodles and veggies and 1/4 cup chopped almonds (peanuts would work too) were all mixed together and wah la! we had an easy tasty dinner. It would be even tastier with some grilled tofu but I was hungry!
